EGGLESS PINEAPPLE & SWEET LIME CAKE
Ingredients:
- 1 and half cups of Refined flour/maida (for a healthier option add whole wheat flour)
- 3/4 cup of caster sugar (for a healthier option add raw cane sugar)
- 1tbsp of corn flour
- 1tsp of baking soda
- 1/2tsp of baking powder
- pinch of salt
- 1/3 cup vegetable oil
- 1 cup of sweet lime juice
- zest of 1 sweet lime
- handful of chopped pineapples (1/2 pineapple)
Instructions:
- Mix all the dry ingredients
- Add the zest of 1 sweet lime as well as its juice with vegetable oil
- Add a few chopped pineapples and fold the batter nicely
- Line a tin with oil and dust some flour and pour the batter
- Finally bake the cake for 25-30 minutes in a 175 degrees preheated oven
- Decorate the cake with some light whipped cream and flowers and fruits
