CARROT CAKE ENERGY BALLS
Ingredients:
- 1 cup pitted dates
- 1 cup carrots
- 1cup oats
- 1 1/2tsp cinnamon powder
- 1/2 cup freshly grated coconut
- 1/2 cup walnuts
- zest of 1 grated orange
- 1/4 cup peanut butter (or any nut butter)
Instructions:
- Start by adding the carrots to a food processor, and keep grinding until it is coarse
- Take the carrots out in a bowl
- Next, add the oats, shredded coconut and walnuts into the food processor, and grind it well
- Then add the carrots, pitted dates, cinnamon powder, peanut butter and some orange zest into the food processor to combine everything together
- Form bite-sized balls
- Cover the balls with either desiccated coconut or white chocolate
